Pinterest Recipes--Passed!

So far this week, despite the sinus infection and mind-numbing headache that doesn't seem to want to leave me, I tried three new Pinterest recipes.  I wanted to share them with you because, if you are like me, I am always looking for a way to get out of the cooking rut.

Tonight I made this wonderful ham.  This recipe stood out to me for 2 reasons.  1.  It cooks in the crock pot.  2.  It called for 3 cups of brown sugar.  Seriously?!  Who doesn't love brown sugar?  My hidden secret is that when I'm craving something sweet, and since I can't eat most sweet things because they contain gluten, I go to the pantry and sneak a spoon full of brown sugar.  It always satisfies my sweet tooth!

My coffee morning with the girls has been moved to Monday and this week I was the host.  I felt horrible Sunday night but I was determined to have something sweet for us to have with my coffee.   Before my maternal grandmother passed away she would say "Now Nancy (my mom), what are we having with our coffee?"  So, I'm a firm believer in always having something sweet to offer with coffee.  I made this pumpkin cheesecake and it was wonderful!  I have to tell you that I have a super fancy recipe for real pumpkin cheesecake that I stole from my sister and it is absolutely out of this world.  It's the real deal cheesecake made in a spring form pan and everything.  I just wasn't up to it Sunday so I tried this recipe that I found on Pinterest.  I will admit that it wasn't as good as the real thing, but it was still really yummy.

To further prove that I'm a glutton for punishment, my friend Cissy stopped by this morning to let Tip and Jack play.  Of course I knew that coffee would be involved and I knew we had eaten all of the pumpkin cheesecake last night for Jack's birthday.  So, what else was I to do?  Jack and I quickly made a batch of these No Bake Nutella Peanut Butter Cookies.  They were wonderful and gluten free!

Disclaimer..I almost never take pictures of my cooking.  I'll be the first to admit that neither my cookies nor my ham looked like what you see in the picture.  However, they sure tasted great.  And isn't that all that matters in the end?

    1. It does seem like a lot but honestly it wasn't too sweet. I'd say you could definitely use less if you wanted. The pineapple juice made it sweet enough!

  6. Kate, I'm sure you already know about this website but I'll share it anyways. My second child was diagnosed as being severely allergic to ALL GRAINS (not just gluten) AND dairy this past winter and as you can imagine that threw a huge roadblock in my life for a little while. I have 4 kids under 6 and yea, it was a rough few months. But this website has saved my life many times over. I will say in her recipes I often sub maple syrup or even regular sugar where she uses Agave nectar (hate that stuff) and coconut oil or just about any oil where she uses some less used oils. One of my favorite dessert recipes is the black and white "cake" that really is like the most awesome brownies ever. I used dark chocolate chips on top instead of white. :)

    I am always after new ideas and actually did the baked sweet and sour chicken recipe after seeing it here on your Blog.
    I personally find Pintrest a bit overwhelming so I like the way you give a small snap shot of a few things that worked - saves me spending hours on there getting 'lost'. I'm off to try the no bake cookies as an after school snack for my crew.

  10. I love the Nutella recipe. I'm going to make some today. Anything that involves Nutella and the words "no bake" has to be good. lol...


    Were you careful to use certified gluten-free oats, and not just regular oats? That could explain your headache if you didn't. Most commercial oats are contaminated. I just wondered because the headache is my first symptom if I've gotten gluten somewhere.


    The ham looks good too. I only ever cook ham at Easter and Christmas. I wonder why? lol.. Who says I can't cook it at another time? '

  13. I tried a new pinterest recipe this week too. I actually tried one called Chicken Fetuccine with Creamy Pesto Sauce. It was really good. The only thing I would have done differently was add a little more cream to the sauce. It is a fast meal to make too! My pinterest name on there is lins00 it is on my favorite recipe board. :)
