One my favorite things to do, when I have the time, is cook. I love to try new recipes and my sweet husband doesn't usually mind being the guinea pig. I even have a special keepsake notebook where I write the recipes I try and make notes that I hope my kids will appreciate one day.
When I can get my kids in the mix that makes it even more fun. One of my favorite memories of cooking with my children was a few Halloween's ago. Lucy was only about 3 years old and Jack wasn't even thought of yet. We had a lot of time on our hands back then :)
We bought a great pumpkin and set out to carve it into a scary masterpiece. It's our tradition to scoop out the seeds and roast them. After we did that, I wanted to show the girls how to make pumpkin pie. I have to be honest here and say that Pumpkin Pies and I have a very sordid history. Every single time I make one I always, always spill some (or more) of the filling in my oven. It never fails! I think I would make more pies if I didn't have such a bad track record.
This particular time was no exception. Half of the pie spilled into the bottom of my oven as I was showing the girls how to finish up the pie. They might have thought it was funny if they weren't taken aback by the look on my face. It makes me cringe each time because I know what a hassle it will be to clean. My oven isn't ancient by any means, but it isn't super fancy. I sure wish I had on of the new LG EasyClean Ovens. They look awesome! Have you read about them? Kate's Favorite Pumpkin Pie
3 c. canned pumpkin
1 c. sugar
1/2 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. ground allspice
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
3 large eggs, lightly beaten
1 (12 oz) can evaporated milk
deep dish pie crust
Cool Whip
- Combine the first 9 ingredients in a large bowl, stirring well. Pour filling mixture into pie shell.
- Bake at 425 degrees for 15 minutes; reduce heat to 350 degrees and bake for 50 minutes or until a knife inserted into the middle comes out clean. Cover and store in refrigerator.
- Cool Whip is optional, but not in my house. The more cream the better!
- Be careful! Don't spill your pie filling. But if you do, think of me!

I have a messy pumpkin pie story as well, except it was my grandma and it was all over her and all over the floor. Praise God she wasn't hurt too bad so it was humerus.
ReplyDeleteAt first I couldn't think of something that always makes my oven messy, but then I went to look in my oven to see if I could find a tell tell mess. Mine would also be pie. Any time I don't put a pan under it, pie will boil over.
My favorite pie recipe... Yummy and Easy!
Pecan Pie
1 - 1 1/2 coarsely chopped pecans
3 Eggs well beaten
1 c sugar
1 c light karo syrup
1 Tbsp Vanilla
2 Tbsp Buttermilk or canned milk
2 Tbsp melted butter
Mix all together and pour in a 9 inch unbaked pie shell at 350* for 45 min.
My favorite "messy recipe" is probably eggplant parmesan. Between making sauce, breading and frying eggplant and layering it all with lots of cheese, the kitchen is a disaster afterwards. But, it's so worth it! :)

ReplyDeleteMy family's favorite messy recipe is calzones. My girl's love to help, which is a mess in itself, but even worse is the burnt cheese left in the bottom of my oven afterwards. Good thing they are so yummy!
ReplyDeleteThis isn't really too messy, but it gives me the same feeling your pie does. EVERY time I roast broccoli in the oven, when I flip them over I drop a piece (or three) in the bottom of the oven. Not so messy, but OH MY WORD THE SMELL. It lasts for days and days!!
